I was introduced to the Grilled Brie and Pear sandwich on Sourdough bread a few years ago.
For those of you who've never indulged, it's like a grilled cheese but with the addition of pear.
It was good, but I wanted a sweeter version.
So I begin mine with
Pepperidge Farm Cinnamon Swirl bread
(no raisins please).
Butter one ,or both sides, of two slices of bread.
Wash and core the pear.
Slice the pear about the same thickness as the bread and arrange on one slice of bread
(Hint: I microwave my sliced pear on a saucer about 20 seconds just until you hear it sizzle. This gets it nice and hot. I am impatient and cook over a higher flame so when the bread is done the inside temperature is hot enough to melt the cheese but is not hot enough to cook the pear.Cold pear is not good.)
Sprinkle with a cinnamon/sugar mixture.
Top with a slice of Colby Jack cheese and top with the second slice of bread.
After assembling the sandwich
place on pancake griddle on stovetop, cook as with any other grilled cheese sandwich.
When the underneith side is cooked golden to your liking, turn with pancake spatula then sprinkle the cooked side generously with cinnamon/sugar.
Repeat with other side.
Enjoy Hot off the griddle!!

Almost too good to be called a sandwich, tastes more like a dessert!
